Peach Mango Chicken & RicePRINT RECIPE
- Spread chicken breasts with extra Peach & Mango Chutney before cooking too.
- 300g cooked long grain rice
- 150g chopped celery
- 150g deseeded, sliced cucumber
- 150g deseeded chopped green pepper
- 3 cooked, sliced, chicken breasts
- 60g Barker’s Peach & Mango Chutney
- 30g lite mayonnaise
- 1 Tbsp chopped parsley
- Place rice in a bowl, and add celery, cucumber and green pepper.
- Combine together Peach & Mango Chutney and lite mayonnaise.
- Add to rice and mix well.
- Place in serving dishes and top with chicken.
- Garnish with parsley.
