Cherry Gingerbread Cheesecake Cups
A festive no-bake treat with layers of spiced gingerbread crumbs, creamy vanilla cheesecake, and sweet Barker’s Cherry Jam. Finished with a gingerbread cookie for the perfect holiday indulgence!

Ingredients
- 4 Tbsp Barker’s Cherry Jam
- 250 g Cream cheese, Softened
- 2 Tbsp Icing sugar
- 1 tsp Vanilla extract
- 1/4 tsp Ground cinnamon
- Gingerbread Cookies
Method
- Crush the gingerbread cookies into fine crumbs. Spoon into the jar and press down gently to form the base.
- In a bowl, beat cream cheese, icing sugar, vanilla, and cinnamon until smooth and creamy. Pipe over the base.
- Spoon Barker’s Cherry Jam into the jar.
- Chill for at least 30 minutes.
- Top with a Gingerbread cookie and enjoy!
