Lemon Passionfruit Pavlova Wreath

Ingredients
- 600 ml Thickened cream
- 200 ml double cream
- 3/4 cup Barker's Passionfruit Lemon Dessert Sauce
- 24 Store-bought petite pavlova
- Blueberries
- Fresh mint leaves
- Fresh kiwi, peeled and sliced
Method
- Use electric beaters to whip the thickened and double cream in a large bowl until soft peaks form.
- Add Barker’s Lemon Passionfruit Dessert Sauce and continue beating until firm peaks form.
- Transfer the cream mixture to a large piping bag fitted with a 1.5 cm fluted nozzle.
- Arrange the pavlovas in a wreath shape on a large round platter.
- Pipe a generous peak of the cream mixture into each pavlova. Use any remaining mixture to fill gaps between the pavlovas so the wreath looks full and lush.
- Decorate with fresh blueberries, fresh kiwi slices, and mint leaves. Drizzle with extra Barker’s Lemon Passionfruit Dessert Sauce just before serving.
