Ingredients

Method

  1. Use electric beaters to whip the thickened and double cream in a large bowl until soft peaks form.
  2. Add Barker’s Lemon Passionfruit Dessert Sauce and continue beating until firm peaks form.
  3. Transfer the cream mixture to a large piping bag fitted with a 1.5 cm fluted nozzle.
  4. Arrange the pavlovas in a wreath shape on a large round platter.
  5. Pipe a generous peak of the cream mixture into each pavlova. Use any remaining mixture to fill gaps between the pavlovas so the wreath looks full and lush.
  6. Decorate with fresh blueberries, fresh kiwi slices, and mint leaves. Drizzle with extra Barker’s Lemon Passionfruit Dessert Sauce just before serving.
