Mini Halloween Pies

Ingredients
- 2 sheets Shortcrust pastry, thawed
- 1/2 cup Barker’s Cherry Jam
- 1/2 cup Cherries
- 1 tsp Unsalted butter
Method
- Preheat your oven to 190°C (375°F) and line a baking tray with parchment paper.
- Unroll the shortcrust pastry and cut out 16 circles using a Mason jar lid or a large round cutter (about 8cm wide).
- Set aside 8 circles for the tops, and use a small knife or cookie cutter to carve spooky Halloween faces — think jack-o’-lantern grins, ghostly eyes, or monster mouths.
- Flip Mason jar lids so the rubber seal faces down, and press one pastry circle into each lid, gently pressing up the sides.
- In a small bowl, stir together Barker’s Cherry Jam and the chopped fresh cherries.
- Spoon a little of the cherry mixture into each pastry base, filling just below the edge.
- Place your spooky cut-out pastry tops over the pies, pressing the edges together and folding under for a neat seal. Use your fingers or a fork to crimp the edges, then brush the tops with melted butter.
- Arrange the pies on your lined tray and bake for 25 minutes, or until golden and crisp.
- Let cool slightly before carefully popping them out of the lids from underneath.
- Serve warm or at room temperature — the perfect spooky-sweet treat for Halloween!
