Coffee Rubbed Pork Ribs

Pork ribs are a family BBQ favourite, and this recipe with a coffee and spice rub and our Barker’s Tomato BBQ Rib Meal Sauce is sure to please!

Ingredients
- 2 Tbsp Espresso grind coffee
- 2 tsp Cumin, ground
- 2 tsp Smoked paprika
- 1 tsp Onion powder
- 1 tsp Garlic powder
- 2 Tbsp Brown sugar
- 4 Tbsp Dijon mustard
- racks Baby back pork ribs
- 1 jar Barker’s Tomato BBQ Rib Meal Sauce
Method
- Combine the coffee, cumin, smoked paprika, onion, garlic, and brown sugar and set aside.
- Brush the Dijon mustard over the pork ribs and then sprinkle the rub generously over both sides of the pork. Put on a rack that will fit into a lipped baking tray. Refrigerate for 2 hours to marinate (or leave overnight).
- Preheat the oven to 160°C. Put 250mls water in the baking tray. Sprinkle the pork with salt, cover with foil and bake for 1½ hours or until the meat offers no resistance when pierced with a knife.
- Pour ½ the jar of Barker’s Tomato BBQ Rib Meal Sauce into a bowl and loosen with a little water. Brush over the pork and either bake in a 200°C oven for 15 to minutes to heat through or put onto the BBQ to finish cooking, watching that the glaze doesn’t burn.
