Enjoy a twist on a classic with these Raspberry Lamingtons. Combining the tangy sweetness of Barker's Raspberry Jam with the traditional lamington coating, these treats are perfect for any occasion. Simple to make and absolutely delightful!

Ingredients
- 1 store-bought sponge cake (cut into equal size squares)
- 1 cup Barker’s Raspberry Jam
For the Coating:
- 2 cups Desiccated coconut
For the Raspberry Icing:
- 2 cups Icing sugar
- 2 1/2 Tbsp Hot water
- 2 Tbsp Barker’s Raspberry Jam
Method
- Cut the sponge cake into equal size squares.
- In a bowl, whisk together icing sugar, hot water, and warmed Barker’s Raspberry Jam until smooth and pourable. Adjust consistency if needed.
- Dip each sponge square into the raspberry icing, coating completely, then roll in desiccated coconut to cover.
- Place coated lamingtons on a wire rack and allow the icing to set for about 30 minutes.
- Add a dollop of Barker’s Raspberry Jam on one lamington, then sandwich with the another lamington.
- Chill for 15 minutes before serving to help the filling set.
