Sweet & Sour Fish Bake

A simple yet delicious Sweet & Sour Fish Bake, an easy switch from your classic Sweet & Sour Chicken recipe, on the table in 30 minutes!

Ingredients
- 450 g Firm white fish fillet
- 1 Tbsp Olive oil
- 1 diced Red capsicum
- 1 diced Carrot
- 425 g Baby corn
- 225 g Pineapple pieces
- 500 g Barker's Easy Sweet 'n Sour Meal Sauce
- 2 thinly sliced, Spring onion
Method
- Preheat oven to 180ºC fan bake. Place fish in a large oven-safe dish, season with salt and pepper and drizzle with oil.
- Microwave capsicum, carrot and corn, if using, for 1 1/2 minutes, to soften a little. Arrange on top of fish. Add pineapple pieces. Pour Barker’s Sweet and Sour Meal Sauce over the top.
- Bake for 20 minutes, until fish is cooked through and veggies are tender. Serve on rice or with crusty fresh bread. Garnish with spring onions.
Tips
- Fish could be swapped for raw prawn cutlets.
