Ingredients
- 3 store-bought croissants (preferably day-old for best texture)
- 1/2 cup Barker’s Raspberry Jam
- 1/2 cup almond meal (ground almonds)
- 1/4 cup Caster sugar
- 2 Tbsp Unsalted butter, softened
- 1 Egg
- 1 tsp Vanilla extract
- 1/4 cup Almonds, sliced
- Icing sugar, to dust
Method
- Preheat oven to 180°C (350°F) and line a baking tray with baking paper.
- In a bowl, mix almond meal, caster sugar, softened butter, egg, and vanilla extract until smooth — this is your almond filling.
- Carefully slice each croissant in half horizontally.
- Spread a generous layer of raspberry jam on the bottom half of each croissant.
- Top the jam with a thick layer of almond filling.
- Place the top halves of the croissants back on.
- Brush the croissants lightly with beaten egg for a glossy finish.
- Sprinkle sliced almonds on top of each croissant.
- Bake for 15-20 minutes or until golden and almond filling is set.
- Let cool slightly, then dust with icing sugar if desired before serving.
