Raspberry & Almond Croissants

Delight in these Raspberry & Almond Croissants, a perfect blend of sweet and nutty flavors. Using store-bought croissants, this recipe is quick and easy, yet impressively delicious. Ideal for breakfast or a special treat!

Ingredients

  • 3 store-bought croissants (preferably day-old for best texture)
  • 1/2 cup Barker’s Raspberry Jam
  • 1/2 cup almond meal (ground almonds)
  • 1/4 cup Caster sugar
  • 2 Tbsp Unsalted butter, softened
  • 1 Egg
  • 1 tsp Vanilla extract
  • 1/4 cup Almonds, sliced
  • Icing sugar, to dust

Method

  1. Preheat oven to 180°C (350°F) and line a baking tray with baking paper.
  2. In a bowl, mix almond meal, caster sugar, softened butter, egg, and vanilla extract until smooth — this is your almond filling.
  3. Carefully slice each croissant in half horizontally.
  4. Spread a generous layer of raspberry jam on the bottom half of each croissant.
  5. Top the jam with a thick layer of almond filling.
  6. Place the top halves of the croissants back on.
  7. Brush the croissants lightly with beaten egg for a glossy finish.
  8. Sprinkle sliced almonds on top of each croissant.
  9. Bake for 15-20 minutes or until golden and almond filling is set.
  10. Let cool slightly, then dust with icing sugar if desired before serving.
